Aromatics are volatile, so the oven takes back part of what you added

Vanilla, spices, zest and extracts all lose something to heat, and where you add them in the method decides how much of them survives to the plate.

The compounds we smell are volatile, which means they evaporate readily and leave the bake along with the escaping steam. A long bake in a dry oven therefore strips more aroma from the surface than a short bake in a humid one does. The crust loses the most, since it reaches the highest temperature and is where evaporation is happening fastest.

That is why a cake can smell magnificent in the kitchen and taste comparatively plain once it has cooled on the rack. Some of what you smelled was flavour genuinely leaving the bake rather than flavour developing inside it.

Why fat holds flavour better than water

Many aromatic compounds dissolve far more readily in fat than in water, so they stay bound to the fat phase of a batter. A rich batter therefore holds onto vanilla, citrus oils and spice aromatics better than a lean, watery one. This is the reasoning behind rubbing citrus zest into sugar or infusing it into warm butter before mixing.

Sugar helps as well, since a syrupy environment slows the movement of volatile molecules towards the surface. It also explains why the same quantity of vanilla reads as stronger in a buttery cake than in a lean sponge.

Where extracts lose out

Alcohol-based extracts carry their aromatics in a solvent that boils off early in the bake, taking some of the flavour with it. Pastes and ground whole ingredients tend to survive better, because more of the flavour is bound to solid material.

Weighed out, vanilla seeds scraped from a pod stay in the crumb, which is why they read differently from an equivalent amount of extract. Artificial vanilla flavouring is often more heat-stable than natural extract, which is one reason it persists in commercial baking. None of this makes extracts wrong, and it does mean recipes usually call for more than you would expect.

Ground spices contain volatile oils that begin evaporating from the moment they are ground, so old jars taste of very little. Grinding whole spices shortly before use gives a noticeably stronger result from the same weight.

Weighed out, gentle warming in fat before mixing releases aromatics and disperses them through the batter rather than leaving them in clumps. Heat also transforms some spice compounds, which is why a baked spice mixture tastes different from a raw one. Robust spices survive long bakes far better than delicate ones, which is why gingerbreads hold their character and citrus cakes fade.

Adding flavour after the bake

Syrups, glazes, icings and fillings all carry aromatics that never see oven heat, so they arrive at full strength. This is why a lemon drizzle applied after baking tastes sharply of lemon while the crumb beneath tastes mild.

Once the crumb sets, a soaking syrup infused off the heat preserves far more of a delicate flavour than the same infusion baked into a batter. Alcohol added to a finished cake keeps its aroma, since nothing subsequently drives it off. Splitting a flavour between the batter and the finish gives depth in the crumb and brightness on the surface.

Practical decisions this changes

For citrus, put zest in the batter for background and juice or zest in the finish for the sharp top note. For vanilla, use a paste or seeds in anything baked for a long time and save the extract for uncooked components.

For spice, warm it in fat, use it fresh, and accept that a long slow bake will mute anything delicate. None of these are rules so much as consequences of what happens to volatile molecules in a hot dry box.
