Shortcrust that shrinks down the tin is telling you about gluten

Pastry walls that slump into a shallow crater during blind baking were stretched, not laid, and the gluten in them is simply returning to where it wants to be.

The mechanism

Gluten strands that have been stretched during rolling and lining behave elastically and want to return to their original length. While the dough is cold and firm, the fat holds everything in position and nothing moves. As the oven melts the fat, that restraint disappears and the strands contract before the starch has set the shape.

The walls of a tart case are the most affected, because they are held up only by friction against the tin. So shrinkage is a delayed consequence of how the pastry was handled twenty minutes earlier.

Too much water

Water is what activates gluten, and a wetter dough forms a stronger, more elastic network that contracts more forcefully. A wet dough is also easier and more pleasant to roll, which makes this a genuinely misleading trade. Add water a tablespoon at a time, tossing with a knife, and stop while the mixture still looks ragged rather than cohesive.

Press the ragged crumbs together into a disc with your hands, which hydrates enough without further mixing. A dough that feels slightly too dry when mixed usually feels correct after thirty minutes in the fridge.

Not resting long enough

A rest of thirty minutes to an hour after mixing lets the gluten relax and the water distribute evenly through the flour. Rolling a rested dough takes less force, which itself develops less additional gluten and starts a virtuous cycle. The second rest, after lining the tin, is the one most often skipped and the one that prevents wall slump directly.

At oven temperature, chilling the lined case for thirty minutes, or freezing it for fifteen, sets the fat firmly before it meets the oven. Baking from properly cold sets the surface before the fat melts, which limits how far anything can move.

Stretching during lining

Lifting the rolled sheet and stretching it to reach the far side of the tin builds tension that will be released in the oven. Instead, lay the pastry in loosely and ease it down into the corners so it sits without being pulled. Use a small ball of spare dough to press it into fluted edges rather than fingertips, which tear and stretch.

Once the crumb sets, leave the excess hanging over the rim during baking and trim it flush afterwards with a small serrated knife. That overhang absorbs whatever shrinkage does occur, so the finished case still reaches the top of the tin.

Weights and support

Blind baking weights hold the walls against the tin until the starch has gelatinised and the shape is fixed. Fill the case right to the top of the sides rather than halfway, since unsupported upper walls are exactly what slumps. Ceramic beads, dried beans, rice and metal chain all work, and the key quality is filling the case completely.

Fifteen to twenty minutes with weights at 180 to 190C is usually enough to set the structure. Removing them too early is a common error that undoes everything the weights were there to do.

Proving times are written for a warm kitchen, and yours may not be one.

Flour choice

Plain flour at nine to eleven per cent protein is appropriate; bread flour at twelve or more will shrink noticeably more. Replacing a portion of the flour with ground almonds or cornflour reduces the achievable gluten and the shrinkage with it.

A richer pastry with egg yolk and sugar is more fragile to handle but far more stable in the tin. If shrinkage persists after fixing the water and the rests, the flour is the remaining variable worth changing. Note the flour brand on the recipe, since protein content varies between mills and between countries.

Can I patch a case that has already shrunk?

Yes. Press raw pastry into the thin areas, brush with beaten egg, and return it to the oven for a few minutes to seal. It will not be invisible, but a filling and a topping hide it completely.

Does resting in the freezer work as well as the fridge?

For the short pre-bake chill, yes, and fifteen minutes in the freezer is a good substitute for thirty in the fridge. For the initial rest after mixing it is worse, because you want the gluten to relax rather than the dough to freeze.
