Why bowl shape distorts what you see

A curved bowl is narrow at the base and wide at the rim, so equal increases in height are not equal increases in volume. Dough that has risen halfway up a bowl has gained far less than half the volume it will hold at the top.

Size and shape of container

A container much larger than the dough spreads it thin, which cools it faster and makes height changes hard to read. One too small forces the dough up the sides and against the lid, distorting both the reading and the dough. Something in which the dough occupies roughly a third of the volume at the start is a workable rule.

Square and rectangular tubs also make folding in the container easier, since the corners give something to grip.

Depth matters as well, since a deep column of dough ferments unevenly compared with a shallow one.

Lids and surface drying

A lid stops the surface drying into a skin that later shows as hard streaks through the crumb. It should rest rather than seal, since gas needs somewhere to go and a sealed lid can pop off. A damp cloth works, though it cools the dough by evaporation and sometimes sticks to the surface.

Oiling the container lightly makes turning the dough out much easier without adding meaningful fat to the dough. For a long cold retard, a well-covered container matters more, because fridge air is dry and moving.

Using it as a proving environment

A sealed tub inside a larger tub of warm water holds temperature far more steadily than air does. The container also insulates the dough slightly, which slows the drift towards room temperature. Marking the level and noting the time at each check builds a record of how your kitchen behaves.

The dough tells you first: over a few bakes that record tells you more about your own fermentation than any recipe timing can. None of this requires specialist equipment, and a food-safe plastic box with straight sides does everything described.
