Dough temperature is the dial most home bakers never touch
Two loaves from one recipe can behave nothing alike because one finished mixing at 22C and the other at 27C.

Once the crumb sets, long, cool fermentation also lets flour enzymes break down more starch into sugars, which shows up as a darker crust for the same oven time.

Holding the temperature after mixing
The dough will drift towards room temperature over the course of bulk, so a 26C dough in an 18C kitchen is not staying at 26C. An insulated box, a switched-off oven with the light on, or simply a covered tub inside a larger tub of water all work.
Weighed out, water baths are the most stable of the three because water changes temperature far more slowly than air does. Check once an hour rather than continuously, and note the drift so you can predict it next time. If the dough cools two degrees an hour, plan the timings around the average rather than the starting number.
