Two per cent salt: why bread recipes keep landing on the same number

Salt in dough is a structural ingredient with a narrow useful range, and both ends of that range are obvious in the finished loaf.

What follows is an argument about salt levels in bread dough, and about where the received version of it stops being true.

Where the number comes from

Almost every lean bread recipe uses salt at between 1.8 and 2.2 per cent of the flour weight, which is ten to twelve grams per kilo. Below about 1.5 per cent the bread tastes noticeably flat and the dough handles worse; above 2.5 per cent the salt dominates. The range is narrow because salt is doing three separate jobs and each has its own tolerance.

That convergence across cultures and centuries is a good sign that the number is functional rather than conventional. Expressing it as a percentage rather than a spoon measure matters, because salt crystals vary enormously in density.

Salt tightens the gluten network

Sodium and chloride ions shield the charges on gluten proteins, letting the strands pack closer together and bond more readily. The practical result is a dough that feels firmer, less sticky and more elastic than the same dough made without salt.

Weighed out, a dough left unsalted by accident is immediately recognisable, because it stays slack and tacky no matter how long you work it. That tighter network also holds gas better, which is part of why unsalted loaves bake flatter. The effect is quick and does not require long resting to appear.

Salt slows the yeast

Salt draws water osmotically and reduces the water available to yeast cells, which slows their reproduction and gas production. At two per cent the slowing is moderate and useful, giving you a longer, more controllable fermentation window. Remove the salt and the same dough can ferment forty per cent faster, arriving at overproved before you have finished the folds.

Weighed out, this is why recipes that add salt late, after an autolyse, sometimes need their timings adjusted slightly. In heavily enriched doughs, where sugar is already slowing things down, salt levels are often kept at the lower end.

Salt and flavour

Beyond simple seasoning, salt suppresses bitterness and lets the flour's own wheaty, nutty notes come forward. Bread without salt does not taste bland so much as hollow, because there is nothing balancing the fermentation acids. Some regional breads, notably Tuscan bread, are made without salt deliberately and are eaten with heavily salted accompaniments.

That tradition confirms the point rather than contradicting it, since the salt arrives from somewhere else on the plate.

If bread tastes dull despite a long fermentation, check the salt weight before blaming the flour.

Which salt and when to add it

Fine sea salt and table salt dissolve fastest; coarse flakes can survive mixing and leave hot spots in the crumb. Dissolving the salt in a small portion of the recipe water removes that risk entirely and costs nothing. Adding salt after a twenty to sixty minute autolyse lets the flour hydrate freely first, since salt slows water uptake slightly.

The benefit is real but modest, and adding salt at the start is perfectly acceptable for most doughs. Iodised salt is fine in the quantities used and does not measurably affect fermentation.

Weigh rather than scoop wherever a recipe leaves you the choice.

Adjusting deliberately

If you are baking with a very long cold retard, keeping salt at the upper end of the range helps control the extended fermentation. For a fast same-day loaf, the lower end lets the yeast move without needing extra commercial yeast. Wholemeal doughs often carry salt slightly higher, since the stronger flavour of the bran can otherwise dominate.

Weighed out, change salt in one tenth of a per cent steps and taste across bakes, because the differences are subtle but real. Weigh it every time; salt is the ingredient where a careless spoon does the most damage.

What happens if I forget the salt entirely?

The dough will be slack and sticky, will ferment much faster than expected, and the loaf will taste hollow and be paler than usual. If you notice within the first few minutes of mixing you can dissolve the salt in a little water and work it in.

Does salt kill yeast on contact?

Not in the amounts used in bread. The old advice to keep them apart comes from the concentrated contact of undissolved salt sitting directly on fresh yeast, which is easily avoided by dissolving the salt in water.
