Enriched dough behaves differently because fat gets between the strands
Butter, eggs and sugar do not simply make bread richer. Each one interferes with gluten and yeast in a specific way that changes how the dough must be handled.

What fat does to the dough
Fat coats gluten strands and sits between them, physically preventing some of the bonds that would otherwise form. A dough with butter added at the start can take twice as long to develop, and may never reach the same strength. The standard solution is to build the gluten network first with flour, liquid and yeast, then add softened butter in stages.
Each addition should be fully incorporated before the next, or the dough splits into greasy slabs that refuse to come together. Once the fat is in, the dough turns silky and slack, and that texture change is the signal to stop mixing.
Butter quantity and its consequences
A lightly enriched loaf might carry ten to twenty per cent butter on flour weight, while a rich brioche can reach fifty per cent or beyond. As the percentage climbs, the dough becomes more temperature sensitive, since butter is firm at 15C and running at 30C. Above roughly thirty per cent, most bakers chill the dough during and after mixing to keep it workable.
The reward is a soft, tender, close crumb that stays fresh for days, because fat slows starch retrogradation. The cost is a loaf with far less oven spring, since the weakened network cannot hold as much gas.
Sugar, osmosis and yeast
Sugar competes with yeast for water, and above about ten per cent on flour weight the yeast slows measurably. Heavily sweetened doughs therefore need more yeast, more time, or an osmotolerant yeast bred for the purpose.
Sugar also lowers the temperature at which the crust browns, so an enriched loaf will colour long before it is cooked through. Baking lower, typically 170 to 185C rather than 220C, and covering with foil part way through prevents a burnt shell over raw dough. The internal target is lower too, usually 88 to 93C, because the crumb sets at a lower temperature with fat and egg present.
Eggs do two things at once
Egg yolk brings fat and lecithin, an emulsifier that helps fat disperse evenly through the dough and softens the crumb. Egg white brings water and protein that sets on baking, adding structure that partly offsets the weakening effect of the fat.
Weighed out, a dough enriched with whole eggs is therefore stronger than one enriched with the same weight of butter alone. Remember to count roughly three quarters of the egg weight as liquid when calculating hydration.
Egg also deepens crust colour markedly, which is why an egg wash browns so much faster than a bare surface.
Fermentation and handling
Enriched doughs ferment more slowly, so a final prove of two to three hours at 25C is common where a lean dough needs one. They also prove more subtly, without the dramatic doming of a lean dough, so the poke test matters more than appearance. A cold retard makes rich dough much easier to shape, because the butter firms and the dough stops sticking to everything.
Shaping should be done quickly and with cool hands, since body heat alone can soften butter enough to cause leakage. If the dough starts to look greasy on the surface, stop, chill it for twenty minutes, and continue.
Judging the finished loaf
A well made enriched loaf has a fine, even, slightly shredded crumb that pulls apart in strands rather than crumbling. A greasy, heavy crumb usually means the butter was added too early or the dough got too warm during mixing. A dry, cakey texture points to overbaking, which happens easily because the crust colours before the centre is done.
Once the crumb sets, enriched loaves benefit from cooling fully before slicing, since the fat needs to set for the crumb to firm. Store them wrapped rather than open, because the soft crust goes leathery in air within hours.
