Shaping a loaf is about surface tension and very little else

Every shaping method, however it is described, is doing one job: building a taut outer skin that holds the gas in and directs the expansion upward.

The one thing shaping does

When you shape, you are dragging the outer layer of dough against itself until the gluten there is stretched tight and elastic. That tensioned skin behaves like a balloon wall, so gas produced inside pushes against it rather than escaping sideways. A dough with no surface tension spreads into a puddle in the oven regardless of how well it fermented.

This is why two loaves from the same tub can bake to completely different heights with no other difference between them. Everything about batards, boules and folds is a route to the same physical outcome.

Preshape and bench rest

The preshape is a light round or fold that organises the dough and starts the tension, without trying to finish the job. A rest of twenty to thirty minutes afterwards lets the gluten relax so the final shape can be tightened further without tearing.

Skipping the rest means fighting an elastic dough that springs back, and the surface usually rips before it tightens. The dough should spread slightly during the rest, holding a soft dome rather than flattening into a disc. If it flattens completely, it was underproved at preshape or the dough lacks strength, and the final shape will not save it.

Flour on the bench, and how much

Surface tension is built by friction between dough and bench, so a heavily floured surface removes the grip you need. Work on a lightly floured or entirely bare bench for the final shape, and keep the flour for the top of the dough.

The dough tells you first: a bench scraper does the work your hands would otherwise do badly, lifting and dragging without deflating the mass. Damp hands sometimes work better than floured ones on very wet doughs, because water prevents sticking without killing friction. If the dough is sticking so badly that shaping is impossible, it is usually overproved rather than simply wet.

Seams and closure

The seam is the weakest point of the skin, and it should be pinched closed and placed face up in a banneton or face down on a tray. An open seam gives the expanding gas an easy exit, which is why some loaves burst along the side rather than at the score.

Rolling a batard so the seam finishes underneath and letting the loaf rest on it seals the join by weight alone. Do not over-tighten to the point where the skin tears, because a torn surface has less strength than a moderately tight one.

Small surface tears are a sign to stop, not a sign to add another rotation.

Tension and proving interact

A tightly shaped loaf takes longer to finish proving because the skin resists expansion at first. A loosely shaped one appears to prove faster but is really just spreading, and the oven will confirm it. The poke test is judged against the tension you built, which is why the same finger dent means different things on different loaves.

By the second rise, for a cold retard, shape slightly tighter than you would for a same-day bake, since twelve hours in the fridge relaxes the skin. Consistency in shaping is what makes proving judgements transferable from one bake to the next.

Weigh rather than scoop wherever a recipe leaves you the choice.

Practising it deliberately

Shape a spare piece of dough two or three times in a session, since the movement is muscle memory rather than knowledge. Watch how the surface changes from matte and slack to smooth and slightly glossy as tension builds. That visual change is the most reliable feedback available, and it is the same on almost every dough.

In the tin, if a loaf bakes flat, replay the shaping in your head before blaming the flour or the yeast. Shaping is the step where the most improvement is available for the least equipment.
