Lining and greasing matter, but a well-prepared tin still holds a cake if the timing is wrong. There is a window, and it is on both sides.

Straight from the oven the crumb has no strength

A cake leaves the oven with its starch still setting and its structure at its most fragile. It cannot support its own weight while inverted.

Turning out at that point tears the crumb, and the cake breaks across the middle or leaves its surface behind on the tin.

A short rest in the tin lets the structure firm enough to hold together, which is why most recipes specify a few minutes before turning out.

Left too long, sugar glues it in place

Sugar at the cake's surface is dissolved and mobile while hot. As it cools it becomes viscous and then effectively solid.

That cooling sugar forms a bond with the tin, and the bond strengthens as the temperature drops toward room conditions.

High-sugar cakes and anything with a syrup, honey or fruit at the edge stick hardest, because there is more sugar at the interface to set.

Metal shrinks and cake shrinks differently

Both the tin and the cake contract as they cool, and they do so at different rates, which can either loosen the cake or grip it more tightly.

Tins with any inward taper or with a decorative pattern hold the cake mechanically as well as by adhesion, and those need the timing to be right.

This is why a bundt tin is the least forgiving shape and why it is usually turned out sooner than a plain round.

Preparation determines how wide the window is

Greasing alone leaves the fat to be absorbed into the cake during baking, so by the end there may be little left at the interface.

Greasing and flouring leaves a dry barrier that survives the bake, and lining with parchment removes the contact entirely on that surface.

For patterned tins, a paste of fat and flour brushed into every crevice is the reliable method, because it reaches where paper cannot.

Rescuing a stuck cake

Brief reheating softens the set sugar and often frees a cake that had gripped, though it will not repair a torn crumb.

Standing the tin briefly on a damp cold cloth contracts the metal slightly and can break the bond on a flat-bottomed tin.

A thin flexible blade run around the sides works for a straight-sided tin and does more harm than good in a patterned one.

No, since it is a structural fault rather than a doneness one, and the loaf is usually baked correctly. Check the internal temperature separately if you are unsure.

Can I still use a loaf with a big cave in it?
