A curdled custard is rarely one that was cooked too long overall. It is one where part of the mixture got far hotter than the rest and set before anything else did.

Setting happens in a narrow band

Egg proteins begin unfolding and bonding within a limited temperature range, and the difference between thickened and scrambled is a matter of a few degrees.

Below the band nothing happens and the mixture stays liquid. Above it the proteins bond tightly to each other and squeeze out the liquid they were holding.

That is why an egg custard is one of the few things in the kitchen where a thermometer is more reliable than experience.

The pan base is always hotter than the bulk

Heat enters through the bottom of the pan, so the layer of custard in contact with it is substantially hotter than the mixture above.

Left undisturbed, that layer passes the setting band while the bulk is still cool, and it curdles into visible specks that then disperse.

Constant stirring is not about mixing but about moving that hot layer away from the base before it can overshoot.

Why gentle heat and a heavy pan help

A thick base spreads the heat and reduces the temperature difference between the hottest spot and the rest, widening the margin for error.

A bain-marie caps the heat at the boiling point of water, so the mixture cannot be driven far past its setting temperature even if attention lapses.

These slow the process, which is exactly the point. A custard is one of the places where speed offers nothing at all.

Sugar and starch both widen the window

Dissolved sugar raises the temperature at which egg proteins coagulate, so a sweeter custard is more forgiving than a plain one.

Starch interferes physically with protein bonding and raises the tolerance further, which is why a starch-thickened cream can be boiled outright.

A custard without either, such as one for a savoury preparation, is the least forgiving version and needs the most careful handling.

Recovering a curdled mixture

Lightly curdled custard can often be rescued by removing it from the heat immediately and blending or sieving it before the curds grow larger.

Cooling the pan base quickly stops the process, since carryover heat in a hot pan will otherwise continue to set the mixture after removal.

Once the mixture has fully separated into solids and watery liquid, nothing recovers it, because the proteins have bonded permanently.
