Carryover Heat Means The Bake Continues After The Oven

A hot bake holds enough stored energy to keep cooking its own centre for several minutes, which is why dense items are pulled before they look finished.

Removing something from the oven does not stop it cooking. Heat already inside it continues moving toward the cooler centre, and the process has a predictable size.

Heat moves toward cold, not toward the oven

During a bake the outside is far hotter than the centre. That gradient drives heat inward, and it does not disappear when the external heat source is removed.

The surface begins losing heat to the room, but a large share of its stored energy continues travelling into the interior first.

So the centre keeps rising in temperature for a period after removal, sometimes by several degrees, before the whole item finally begins to cool.

Mass and density set the magnitude

A thin biscuit holds little energy and is close to room conditions almost immediately, so carryover is negligible.

A deep cake, a large loaf or a dense brownie holds far more, and the centre can continue cooking for many minutes after the oven door closes.

The tin contributes too. A heavy cast tin holds substantial heat and keeps feeding it into the bake long after a thin one has cooled.

Bakes with a narrow window between set and dry are timed for where they will finish, not for where they are when removed.

Custards, cheesecakes and fudgy brownies are all deliberately taken out with a soft centre, because carryover completes the set without overshooting.

Judging this requires knowing the item rather than the recipe, since a shallow cheesecake and a deep one need different margins from the same instruction.

Bread finishes cooking on the rack

A loaf leaves the oven with its interior at roughly the boiling point of water, and the starch there is still setting into its final structure.

Cooling is therefore part of the bake, and the crumb only reaches its proper texture once the loaf has come down to near room temperature.

Cutting early interrupts this and gives a compressed, gummy face, which is frequently misread as an underbaked loaf.

Where carryover works against you

Leaving a bake in its tin on a hot hob or a solid surface prolongs the heat transfer and can push a correctly baked item into overbaked.

Small tins of caramel or sugar are the extreme case, since the mixture continues to darken in the pan and can burn after removal from the heat.

Transferring to a cool surface, or turning out promptly, ends the process early where that is what the recipe needs.

Much less, since pastry relies on steam and fat rather than on chemical leavening holding a delicate structure. The main effect is faster drying, which can be countered with a slightly wetter dough.

Is there one adjustment that helps most?

Reducing the chemical raising agent is usually the single most effective change for cakes. It directly addresses the over-expansion that causes the collapse.
