Double-Acting Powder Splits The Rise Into Two Releases
Baking powder contains more than one acid, chosen so part of the gas appears when liquid is added and the rest only once oven heat arrives.

Baking powder sold in American supermarkets is described as double-acting, which refers to when it releases gas rather than how much. The timing is a formulation choice.
Powder is a base and one or more acids
Every baking powder contains sodium bicarbonate as the gas source and an acid to react with it, plus starch to keep the two apart in the can.
Which acid is used determines how fast the reaction proceeds and what conditions trigger it.
Double-acting powders carry at least two acids with different behavior, so the release is staged rather than happening all at once.
The first release happens in the bowl
One acid dissolves readily in cold liquid and reacts as soon as the batter is mixed, producing the bubbles visible in a freshly stirred batter.
Those bubbles matter because they become the nucleation sites the later gas expands into. A batter with no initial cells has nothing to inflate.
Gas from this stage is lost steadily while the batter waits, which is why sitting on the counter costs a bake some of its lift.
How much is lost depends on how thick the batter is, since a stiff cookie dough holds its bubbles far better than a thin pancake batter does.
The second release waits for heat
The other acid is only sparingly soluble at room temperature and does not react meaningfully until the batter warms in the oven.
That release is timed to arrive while the batter is still fluid enough to expand but close to setting, which is where lift is most useful.
It is also the safety margin that lets a home baker mix a batter, preheat an oven and still get a decent rise.
Baking soda alone has no second stage
Bicarbonate used on its own depends entirely on an acid already in the recipe, such as buttermilk, molasses or cocoa, and reacts on contact.
There is no held-back portion, which is why recipes leavened only with soda insist on going into the oven immediately.
It also means the quantity is limited by the acid available. Excess soda has nothing to react with and leaves a soapy taste and darkened crumb.
Powder loses strength on the shelf
Moisture reaching the can starts the reaction slowly inside it, and an old can produces less gas than a fresh one at the same measurement.
Testing a spoonful in hot water shows whether it still fizzes vigorously, which distinguishes weak leavening from a recipe or technique problem.
A stale can is a common and invisible cause of flat muffins, because everything else about the bake looks exactly as it should.
Storing the can closed and dry, and never dipping a wet spoon into it, is the whole of the maintenance. Most powder is discarded because of a damp measuring spoon.
