Doneness is a temperature event, and almost every other test is an indirect proxy for it. A twenty second measurement replaces all of them.

Why temperature beats every other test
Skewers detect wet batter, knocking detects a dry crust, and springback detects a set surface, all indirectly. Internal temperature measures the thing you actually care about, which is whether the interior has set.
It works identically across recipes you have never made before, which no learned proxy does. It also removes the fear that drives most home bakers to overbake as insurance. For twenty pounds or less it is the highest-value purchase in a baking kitchen.
The targets worth memorising
Lean bread finishes somewhere around 93 to 99C at the centre, depending on hydration and how dry you want the crumb. Enriched bread and buns are done lower, around 88 to 93C, since fat and egg set at lower temperatures. Most butter cakes set around 96 to 99C, while rich brownies are deliberately pulled nearer 90C.
Stirred custards come off the heat at 80 to 84C and baked cheesecakes at around 70 to 75C. Four numbers cover most of what a home baker makes and each one removes an argument.
Choosing a probe
An instant-read digital thermometer with a thin stem settles in two to four seconds and is accurate to about half a degree. Dial thermometers take twenty or thirty seconds and are usually less accurate, which matters when the window is narrow. A thin probe leaves a smaller hole, which matters cosmetically on a cake and not at all on a loaf.
Water resistance is worth having, since the probe will end up in custard, syrup and washing up. Leave-in probes with an external display are useful for long bakes such as fruit cakes.
Using it well
Insert into the geometric centre, which on a loaf usually means going in from the base or the side at an angle. Avoid large air pockets and fruit or chocolate pieces, since both read differently from the surrounding crumb. Take two readings in different spots on anything large or unevenly shaped.
In the tin, wipe the probe between uses, particularly when moving from raw dough to finished product. Check the calibration occasionally in iced water, which should read zero, and boiling water, which reads near 100C at sea level.
Beyond doneness
The same probe measures final dough temperature after mixing, which is the single most useful number in bread making. It checks water temperature before mixing so you can hit a target dough temperature deliberately.
It tells you whether butter is at 18C for creaming or 16C for lamination, both of which matter. It measures proving cupboard and fridge temperatures, which are rarely what the appliance claims. In practice you will use it more before the oven than after it.
Proving times are written for a warm kitchen, and yours may not be one.
Where it does not help
Biscuits and thin items are too shallow to probe meaningfully and are judged by colour and spread. Laminated pastry is judged by colour and by how crisp it sounds, since a probe tells you nothing useful. Meringues drying at low temperature are judged by whether they release cleanly from the paper.
Once the crumb sets, for these, the traditional cues are the right ones and a thermometer adds nothing. Knowing which category a bake falls into is part of using the tool well.
