There is a settled way of talking about baking sheets and trays. It is worth asking how much of it survives contact with the detail.

Why thickness matters

A heavy gauge tray holds more heat and releases it steadily, which gives an even base colour across the whole batch. A thin tray heats and cools rapidly, so it responds to every change in the oven and to every cold item placed on it.

Thin metal also expands unevenly, which is what makes a tray buckle audibly when it goes into a hot oven. Once buckled, part of the tray sits away from the bake and part presses into it, producing uneven contact. That uneven contact is the direct cause of one side of a tray of biscuits browning before the other.

Colour and finish

Dark surfaces absorb radiant heat more readily than shiny ones, so a dark tray browns bases faster. A shiny aluminium sheet reflects more heat and gives a paler, gentler base, which suits delicate items.

At oven temperature, nonstick coatings are usually dark, which is why recipes sometimes advise reducing the temperature when using them. Trays darken with age as fat polymerises onto the surface, so an old tray bakes differently from a new one. Keeping one pale tray and one dark tray gives you a choice rather than a fixed behaviour.

Rims, edges and airflow

A rimless sheet lets air flow across the surface of the bake, which helps things crisp and dry evenly. A rimmed tray traps a layer of humid air around the edges, which keeps them softer than the middle.

The dough tells you first: for pastry and biscuits, that difference between a soft edge and a crisp middle is clearly visible across the finished batch. Rims are necessary for anything that might run, and a flat sheet is a poor choice for a traybake. Having one of each covers most baking, and a rimmed tray with a lip on only one side is a useful compromise.

Keeping a tray flat

Warping comes from uneven heating and from sudden temperature changes, particularly cold water on a hot tray. Letting trays cool before washing extends their life considerably and keeps them flat for longer. Placing cold items on a preheated tray creates the same stress, though the benefit is often worth it.

A warped tray can sometimes be flattened by warming and gently pressing, though the result rarely lasts.

Heavier trays warp far less, which is most of the argument for buying one thick tray rather than three thin ones.

What goes between tray and bake

Parchment prevents sticking and slightly insulates the base, which reduces browning underneath by a small but noticeable amount. A silicone mat insulates more and gives noticeably paler bases, which suits some biscuits and not others.

Baking directly on the metal gives the fastest, darkest base and the crispest result. Greasing and flouring falls between the two and adds a thin layer that browns in its own right. Switching between these changes the outcome enough that it is worth being consistent within a recipe.

Stacking, doubling and other tricks

Two trays stacked together insulate the base and are a standard fix for biscuits that scorch underneath. An upturned rimmed tray gives you a flat sheet when you do not own one.

A tray left in the oven during preheating becomes a crude baking stone for pizza and free-form loaves. Trays sized to leave a gap around the edges let air circulate, which matters more in a fan oven. A tray that fills the oven blocks convection entirely and produces very uneven results.
