Piping is a temperature problem before it is a technique problem
Most piping failures are blamed on unsteady hands, and they are usually a filling that was too warm, too cold or too stiff for the nozzle it was pushed through.

There is a settled way of talking about piping bags and nozzles. It is worth asking how much of it survives contact with the detail.

Why the filling changes as you pipe
A piping bag is held in the hand, and body heat travels through the bag into whatever is inside it. A buttercream that was perfect at the start becomes softer and looser by the end of a long piping session.
That is why the last rosettes on a tray often look slacker and less defined than the first ones did. Filling the bag only part full, and refilling more often, keeps the bulk of the mixture out of your hand. Setting the bag down in a cool place between bursts of work restores the consistency without needing to start again.
Consistency and the nozzle
A narrow nozzle needs high pressure to push mixture through, which warms and shears the mixture as it passes. A wide nozzle needs less pressure but demands a stiffer mixture, since it will not hold its shape otherwise. Mixtures that are too stiff tear the bag or split at the seam, which is the messiest failure available.
At oven temperature, mixtures that are too soft produce shapes that slump within minutes of being piped. Matching the two is a matter of testing on a plate first rather than discovering it on the cake.
Getting the air out
Air trapped in the bag comes out as a sudden splutter, which breaks the shape you were piping. Filling the bag with a spatula, pushing the mixture down and twisting the top expels most of it.
Squeezing a little through the nozzle before starting clears whatever remains at the tip. Standing the bag in a tall glass with the top folded back makes filling much cleaner and traps less air. Bags overfilled to the top cannot be twisted closed, which is how mixture ends up escaping backwards.
Pressure, height and the shape
The size of a piped shape is set by pressure and time rather than by how the nozzle is moved. Holding the nozzle still and squeezing gives a round; moving while squeezing gives a line. Stopping the pressure before lifting away is what gives a clean finish instead of a trailing peak.
Height above the surface changes the shape considerably, since a nozzle held too high lets the mixture fall rather than build.
Practising on a sheet of paper and scraping the mixture back into the bowl costs nothing but time.
Bags, reusable and otherwise
Disposable bags are thin, which means less insulation from your hand but also easier tearing under pressure. Reusable fabric or coated bags are thicker and more robust, and they need thorough cleaning after every use. A coupler lets you change nozzles without emptying the bag, which is worth having if you use more than one.
Weighed out, a sealed food bag with a corner cut off works for simple lines and fills and holds nothing back. Anything that has held a mixture containing raw egg or dairy needs cleaning in line with national food safety guidance.
Choux, meringue and other piped batters
Choux paste is piped at a consistency judged before the bag is filled, and it cannot be adjusted afterwards. Meringue holds its shape well but deflates if it sits in the bag, so it should be piped promptly.
Biscuit doughs piped through a nozzle need to be soft enough to extrude without breaking the bag. Warm mixtures such as a hot meringue set as they cool, which changes their behaviour during a long session. In every case the mixture is doing the work and the nozzle only decides its cross-section.

Why does my buttercream come out with holes in it?
Air pockets in the bag are the usual cause, often from spooning the mixture in loosely. Pressing it down firmly and expelling the air before starting solves it.
Can I chill a filled piping bag?
Yes, and it is a good way to firm a filling that has softened in your hand. Let it come back slightly before piping, since a very cold mixture is hard to push and can split the bag.
