The stages of sugar cookery sound like a specialist vocabulary and are really a single continuous process. Each name marks how much water is left in the syrup.
Temperature is a proxy for concentration
A sugar solution boils above the boiling point of water, and the more concentrated it becomes the higher that boiling point climbs.
So the thermometer is not measuring heat applied but water remaining. A syrup at a given temperature has a predictable sugar concentration regardless of how it got there.
That is why sugar work is one of the few areas of baking where a temperature reading is genuinely definitive rather than indicative.
The named stages describe cooled behaviour
At the lower stages a good deal of water remains, and the cooled syrup stays soft and pliable, forming threads or soft balls between the fingers.
As more water leaves, the cooled sugar becomes firmer, moving through firm and hard ball to the brittle crack stages where almost no water is left.
The cold water test that produced these names works precisely because it drops a sample to room temperature instantly and shows its final texture.
Caramelisation is a separate event
Above the crack stages, with the water essentially gone, sugar begins breaking down and recombining into the coloured, bitter compounds of caramel.
This is a chemical change rather than a concentration change, and it accelerates rapidly, which is why caramel goes from amber to burnt in seconds.
It also generates its own heat as it proceeds, so a pan taken off the stove continues to darken and must usually be cooled deliberately.
Crystallisation is the failure mode throughout
A concentrated syrup is unstable, and a single seed crystal can trigger the whole pan to solidify into a grainy mass.

Soft ball syrup stays pliable and suits fondants and buttercreams, where the sugar has to remain workable after cooling.
Hard crack gives brittle sugar for spun work, cages and glazed decorations, which shatter cleanly and hold their shape indefinitely if kept dry.
All of them absorb water from the air over time, so finished sugar work softens and dulls in a humid room no matter how accurately it was cooked.
