A Baguette Is Mostly Crust, And The Geometry Decides That

A long thin loaf has far more surface area per unit of crumb than a round one, so it dries faster, browns more and goes stale within hours rather than days.

The eating qualities of a baguette follow from its shape rather than from anything unusual in the dough. Most baguette formulas are austere, and the geometry does the rest.

Surface area rises faster than volume shrinks

Stretching a given mass of dough into a long thin cylinder greatly increases its outer surface without changing its weight. A round loaf of the same mass has the least surface possible.

Crust forms on that surface, so a baguette produces a much larger quantity of crust from the same amount of dough. The ratio is the defining property of the loaf.

This is also why baguettes are scored so heavily. The cuts add still more surface, and each opened ear is additional crust.

Drying and browning both accelerate

Heat reaches the centre of a thin loaf quickly, so the whole bake is short. Within that short time the exposed surface loses water fast and begins browning early.

A round loaf of the same weight takes far longer to heat through, which is why its crust develops gradually and its bake is measured in tens of minutes rather than a handful.

The thin cross section also means there is little interior reserve of moisture to migrate outward and soften the crust from within during the bake.

Staling arrives within hours

A crisp crust stays crisp only while it is dry. Moisture from the crumb migrates steadily outward, softening the crust and leaving the crumb firmer.

With so much crust and so little crumb, that migration is complete quickly. A baguette that was excellent at midday is noticeably leathery by evening.

This is not a defect and cannot be baked out. It is why bakeries selling baguettes traditionally bake several times a day rather than once.

The dough is built for the shape

Baguette doughs are typically lean, moderately hydrated and lightly fermented, with nothing that would soften or enrich the crust.

Fat, sugar and milk all work against a thin crisp crust, so they are absent. What flavour there is comes from fermentation time rather than from ingredients.

The dough also has to be extensible enough to roll out to length without tearing, which is why shaping is done in stages with rests between.

Steam matters more than in most breads

Because the bake is short and the crust sets early, the window in which the loaf can still expand is very narrow.

Steam keeps the surface flexible during that window, letting the scores open fully before the crust hardens. Without it the cuts stay shut and the loaf stays small.

Once the steam clears, the surface dries and browns rapidly. Bakers therefore treat the bake as two phases with very different conditions rather than one continuous heat.

How long does it take to build a starter from scratch?

Usually seven to fourteen days at room temperature, with an early burst of activity around day two or three that is not the yeast you want. That false start settles down before the real culture establishes.

Does it matter what water I use?

In most places tap water is fine. If your supply is heavily chlorinated, letting it stand uncovered for an hour or using filtered water removes an obstacle at no cost.
