Fresh, Dried And Instant Yeast Are One Organism In Three States
The three yeast formats differ in water content and drying process rather than species, which changes hydration needs, dosage and how quickly each starts working in dough.

The yeast sold as fresh, active dry and instant is the same organism prepared three ways. The differences are about water, cell damage and how the product is meant to be handled.
Water content sets the dosage
Fresh yeast is a wet cake, mostly water by weight. Dried forms have had that water removed, so the same amount of yeast solids occupies far less of the packet.
That is the whole reason conversion factors exist. A recipe calling for fresh yeast needs roughly a third to a half as much dried, depending on the form.
Getting this wrong is the most common yeast error. Substituting like for like by weight either overwhelms the dough with fermentation or leaves it barely rising.
Drying damages some cells
Active dry yeast is dried at higher temperatures and in larger granules. The process kills a proportion of the cells, and the dead ones release compounds that soften gluten slightly.
Rehydrating it in warm liquid before use lets the surviving cells take up water gradually. Adding coarse dry granules straight to a stiff dough leaves some of them never fully hydrated.
Instant yeast is dried more gently and milled finer, so cell survival is higher and the particles hydrate almost immediately on contact with the dough's own water.
Instant yeast can go straight in
Because the particles are small and porous, instant yeast disperses through flour and takes up water from the dough itself. No separate proofing step is needed.
It also starts working sooner. In a short-process dough that difference is visible, though in a long fermentation the head start disappears entirely.
The one caution is direct contact with salt or with very cold water before mixing, both of which slow the initial activity more than they would with pre-hydrated yeast.
Storage separates them further
Fresh yeast is perishable. It is refrigerated, has a short life, and loses vigour steadily even before it visibly deteriorates or develops off smells.
Dried forms are shelf stable while sealed, but they begin declining once opened and exposed to air and moisture. Cold storage after opening extends that considerably.
Declining yeast does not fail outright. It ferments more slowly, which reads to the baker as a dough that is not rising rather than as a yeast problem.
What none of them change
All three produce the same gases and the same primary fermentation products, so a well-managed dough tastes broadly similar whichever is used.
Flavour differences attributed to fresh yeast usually come from process rather than product. Bakers using it tend to work with longer fermentations and lower doses.
The choice is therefore practical. Availability, storage and how much yeast handling a given schedule allows decide it far more than any quality of the finished bread.

How long does it take to build a starter from scratch?
Usually seven to fourteen days at room temperature, with an early burst of activity around day two or three that is not the yeast you want. That false start settles down before the real culture establishes.
Does it matter what water I use?
In most places tap water is fine. If your supply is heavily chlorinated, letting it stand uncovered for an hour or using filtered water removes an obstacle at no cost.
