What cooking the flour changes

Raw starch granules are tightly packed crystalline structures that absorb only a limited amount of cold water. Heated in water they swell, take up far more liquid and burst, releasing long starch chains that thicken the mixture into a paste.

That gelatinised starch holds many times the water raw flour can, and holds it in a form the dough can carry without going slack. Stirring a portion of the recipe flour with a portion of the liquid over gentle heat until it thickens is the whole technique. The paste is cooled before it joins the other ingredients, because hot paste would damage the yeast and start setting the dough.

Why the dough is not sticky

Adding the same extra water directly to a dough gives you a wet, slack mass that resists shaping and spreads in the tin. Locked into a starch gel, that water is no longer free to lubricate the surface, so the dough handles like a much drier one. This is why enriched breads made with a cooked paste feel firm and pillowy rather than tacky despite carrying more liquid.

The gluten network forms normally around the gel, since the paste is dispersed through the dough rather than sitting as a lump. Mixing the cooled paste in early, before the flour is fully developed, gives the most even distribution through the dough.

Why the loaf stays soft for longer

Bread goes firm mainly because starch recrystallises after baking, squeezing out water it held while the loaf was hot. Water bound inside a gel formed before baking is less available to that process, so the crumb keeps its softness longer. The effect is noticeable rather than magical, and a loaf made this way is still at its best in the first day or two.

In the tin, it also gives a finer, more even crumb, because the gel interferes slightly with how large the gas cells can grow. Those two effects together are exactly what a soft milk bread or a sandwich loaf is trying to achieve.

A yudane uses boiling water poured onto flour and left to stand, which gelatinises the starch without cooking on the hob. A scald in northern European rye baking does the same thing to part of the flour, and is used for flavour as much as texture.

By the second rise, old bread soakers, where stale bread is soaked and added back, work on a similar principle with starch that is already cooked. All of them are ways of introducing pre-hydrated starch into a dough that could not otherwise carry that much water.

The differences between them are practical, and the underlying chemistry is the same in every case.

Getting the proportions right

The paste is made from a modest fraction of the recipe flour, with the rest of the flour and liquid used as normal. Too little makes no difference you can detect, while too much gives a heavy, slightly gummy crumb that never quite dries out. The flour and liquid used for the paste come out of the main recipe rather than being added on top of it.

By the second rise, follow your recipe's proportions the first time and adjust from there, since flours vary in how much water they will take. Cook the paste until it thickens to a soft, spoonable consistency rather than to a stiff, rubbery mass.

Flour absorbs water differently by brand and by season; hydration is a target, not a rule.

Where it belongs and where it does not

Soft enriched breads, milk rolls, burger buns and sandwich loaves are the natural home for this technique. A crusty lean loaf gains very little, since a chewy open crumb and a hard crust are not what a softer crumb serves. Laminated doughs generally leave it alone, because extra softness works against the structure that layering depends on.

In the tin, it suits breads that will be eaten over several days rather than those meant to be finished the day they are baked. Used in the right place it is one of the few techniques that improves keeping quality without changing the ingredient list.
