The split is a consequence of geometry and heat, not a mistake. Understanding why it happens tells you how to control where and how much.

Why the crack forms

In a deep narrow tin, heat reaches the sides and top of the batter long before it reaches the centre. A skin forms across the surface while the middle is still liquid and still generating gas and steam. The centre continues to expand, has nowhere to go, and pushes up through the weakest part of that skin.

The result is a raised ridge with a torn, paler seam where uncooked batter was exposed late in the bake. This is the same mechanism as an unscored loaf of bread bursting at its weakest point.

Tin shape decides how much

A wide shallow round tin has a large surface area relative to depth, so the whole top sets closer to the same time. A 2lb loaf tin is deep and narrow, which maximises the difference between edge and centre timing. Bundt tins have a central tube specifically to shorten the distance heat has to travel into the middle.

The dough tells you first: so the same batter can crack dramatically in one tin and barely at all in another. If a flat top matters, changing the tin is more effective than changing the recipe.

Controlling the split

Piping or spooning a line of soft butter down the centre before baking gives the crack a defined place to open. Scoring the surface lightly with an oiled knife about fifteen minutes into the bake achieves the same thing. The result is a single neat central split rather than a random tear across the surface.

The dough tells you first: this is standard practice for pound cakes and many fruit loaves, and it is purely about appearance. It does not change the bake, the timing or the crumb in any measurable way.

When the crack signals a problem

A very violent, volcano-like eruption with raw batter spilling over suggests the oven is too hot. Reducing the temperature by ten to twenty degrees and extending the bake usually calms it considerably. Multiple cracks in different directions can mean too much raising agent producing gas faster than the structure can accommodate.

A crack that stays wet and sunken after cooling means the centre never finished baking, which is a different fault entirely.

A dry, evenly coloured crack with a set interior is simply what a loaf cake looks like.

Oven temperature and position

Loaf cakes generally do better at 160 to 170C for longer rather than 190C for a shorter time. The lower temperature narrows the gap between when the edges set and when the centre catches up. Placing the tin in the middle of the oven, away from the top element, prevents the surface setting prematurely.

Weighed out, a fan oven circulates hot air across the top and tends to set the skin earlier, so drop the temperature by around twenty degrees. Covering loosely with foil once the colour is right lets the centre finish without further darkening.

Weigh rather than scoop wherever a recipe leaves you the choice.

Insulating the tin

Wrapping the outside of the tin with a damp strip of fabric or a purpose-made insulating band slows the edges. That evens out the setting time across the cake, giving a flatter top and a more uniform crumb.

A double layer of baking parchment around the outside achieves much the same on a fruit cake. The technique is standard for rich fruit cakes baked for three hours or more, where edge overbaking is a real risk. For a quick lemon drizzle it is unnecessary effort for a cosmetic gain.

Does a crack mean the cake will be dry?

Not by itself. The crack is a surface event, and a cake baked to the correct internal temperature is as moist with a split as without one.
