A Sheet Cake Is Shallow, So Every Extra Minute Shows
Spreading batter thin across a large pan raises the surface area enormously, which speeds the bake, narrows the window and makes overbaking the usual failure.

A sheet cake is the same batter as a layer cake spread across far more pan. The change in geometry, not the recipe, determines how it bakes and how it fails.
Thin batter has a very short bake
Heat has to travel only a short distance to reach the center of a shallow pan. A sheet cake can be finished in half the time a deep round would take.

A dark or nonstick sheet pan absorbs more radiant heat and browns the bottom faster than a light aluminum one. In a shallow bake that bottom is a large share of the cake.
Warped thin pans compound the problem by contacting the rack unevenly, which produces one corner that is done and another that is not.
A heavier gauge pan resists warping and heats more evenly, which is the main reason it makes a visible difference here and almost none in a deep loaf.

A sheet cake is the default for school parties, church suppers and office birthdays because it slices into uniform portions with no layering or stacking.
It also travels in the pan it baked in, frosted in place, with no risk of a layer sliding. The whole format is built around transport and portioning.
