Why the oven door stays shut for the first two thirds of a bake

Opening the door drops the oven temperature by a large margin in seconds, and a cake whose structure has not yet set has nothing to hold it up.

What happens when the door opens

Hot air is far less dense than the room air that replaces it, so the oven cavity empties of heat almost instantly. Domestic ovens commonly drop twenty to thirty degrees within a few seconds and take several minutes to recover. Fan ovens lose heat faster still, because the fan pushes air out and pulls cold air in.

The thermal mass of the walls and any stone or steel inside is what determines how quickly it comes back. The cake, meanwhile, is a soft foam that depends entirely on the heat continuing to arrive.

Why timing within the bake matters

For the first half of a bake the batter is still liquid, gas is expanding rapidly and no protein or starch has set. A sudden temperature drop slows the expansion while gravity keeps working, so the risen structure sags. Once the crumb has set, usually somewhere past two thirds of the bake, the shape is fixed and a brief door opening does little.

This is why the same interruption is catastrophic at ten minutes and harmless at forty. The instruction is not superstition; it just needs the timing attached to be useful.

Which cakes are most vulnerable

Foam-leavened cakes such as genoise, chiffon and angel food have the least structural reserve and suffer most. Soufflés are the extreme case, since almost all their volume is expanding gas held by nothing but egg protein. Dense fruit cakes and brownies barely notice, because their structure comes from a heavy batter rather than trapped air.

A Victoria sponge sits in the middle, tolerating a quick look at thirty minutes but not at ten. Match your caution to how much of the cake's height is air.

When you do need to open it

Rotating a cake to fix uneven browning is legitimate, but do it as late as the structure allows and move fast. Covering with foil to stop over-browning can wait until the surface is genuinely set, usually well past halfway. Have everything ready before you open, so the door is open for two seconds rather than fifteen.

At oven temperature, do not slam the door, since the vibration can knock down a delicate structure that survived the temperature drop.

One decisive intervention is better than three cautious peeks.

Using the oven light instead

The internal light and a clean door let you monitor colour and rise without any heat loss at all. Wiping the glass before you start is worth the ten seconds it takes, since condensation and grease obscure everything.

The dough tells you first: a cheap oven thermometer sitting inside also tells you when the temperature has actually recovered after an opening. Learning what your cakes look like through the glass at each stage removes most of the temptation to open the door. This is the cheapest possible upgrade to your baking process.

Domestic ovens routinely run twenty degrees off their dial, so trust a thermometer over the setting.

Preheating properly

Most ovens signal that they are ready when the air reaches temperature, long before the walls and shelves have. Giving an extra ten to fifteen minutes after the light goes out means the cavity has real thermal mass behind it.

In the tin, that reserve is what lets the oven recover quickly when the door does open, whether for the cake going in or a later check. A stone or steel plate left on a lower shelf increases that reserve substantially and helps every bake. An oven that has been properly saturated with heat forgives far more than one that has just reached the setpoint.
